What Is the Black Vein in Shrimp, and Should You Remove It?
If you have ever peeled a shrimp, you have probably noticed the thin dark line running along its back. Most people call it the vein, and many wonder…
What the Vein Actually Is
Despite its common name, the black line in shrimp is not a blood vein. It is the shrimp’s digestive tract, essentially its intestine. That means it can contain whatever the shrimp last ate, along with sand, grit, or other sediment it filtered from the water.
This is why the line can look darker and more pronounced in some shrimp than others. A shrimp that recently fed will have a fuller, more visible tract, while others may show only a faint thread. Understanding what it is helps explain the real reasons cooks choose to remove it, which have far more to do with texture and appearance than with any serious safety concern.
