What the Color of Your Egg Yolk Really Tells You

Decoding the Carton Labels

The words printed on a carton can be genuinely confusing, so it helps to know what they really mean:

  • Pasture-raised: the best of the bunch, with real outdoor time and a varied natural diet
  • Free-range: some outdoor access and slightly better nutrition
  • Cage-free: often just a large barn full of hens that may never actually go outside
  • Organic: can be helpful, but does not automatically guarantee outdoor space

Your best bet for truly rich, well-nourished eggs is often a farmers market or a small local farm, where you can ask directly how the hens are raised. It is worth remembering that a few natural additions to feed, like marigold petals or peppers, can deepen yolk color too, and that yolks often brighten in spring and summer when hens eat fresher food. Season and diet both play a part.
