Homemade Turtle Candy With Pecans, Caramel, and Chocolate

Ingredients You Will Need

The beauty of turtle candy is its short, simple ingredient list. Gather these before you start so everything moves smoothly once the caramel is warm.

For the base and crunch:

  • 64 pecan halves, whole and unbroken, about 2 cups

For the chewy center:

  • 11 ounces (310 g) soft baking caramels, not caramel sauce
  • 2 to 3 tablespoons heavy cream or evaporated milk, optional, for a softer caramel

For the finish:

  • 1 bag (12 ounces / 340 g) semi-sweet chocolate chips
  • 1 teaspoon coconut oil or shortening, optional, for a smoother, glossier coating

Optional upgrades include a sprinkle of flaky sea salt after the chocolate sets for a salted-caramel effect, dark or milk or white chocolate for variety, or a few mini pretzels tucked in for a turtle-bark twist.
